Our Story
My name is Jacki Smith, Co Owner & Operator of Edible Elegance Cake & Bake Shoppe.
When I was a little girl I used to ride the bus to my grandmas work for a visit, which was a children's clothing store in downtown lethbridge. Little did I know that some forty years later I would open my first dream cake shop in that exact location. To put the "Icing on the cake" I opened it with my two daughters, Virginia & Jessie!
I had worked in a retail bakery for 30 years and had always wanted to own my very own specialty cake shop where I could express my artistic abilities and share them with the community. After many nights of painting, construction, and decorating, (all thanks to my amazing family), we put on our aprons, turned on the ovens, and started to bake! Edible Elegance Cake & Bake Shoppe was born! Along the way we have had many cake adventures, and met so many wonderful people who have become faithful customers and friends. Our cakes have traveled all over Canada and we couldn't be prouder!
I would like to say THANK-YOU! Thank you to my incredible, talented daughters for standing by me every step of the way, through good and bad times. Thank you to all of my children and their spouses for help in so many ways behind the scenes, thanks to my great husband for always supporting my dreams, and thanks to all of our fantastic staff, past and present for helping us make all of this a reality! Most of all I would like to thank you Lethbridge for making all of our dreams come true and supporting this little local family of ours!
